We are talking about on of the greatest tennis players ever. That being said, why is his record in Grand Slam finals (8 won, 11 lost) below average?
He has the worst record of W/L among multiple Slam winners.

getting to 19 slam finals is still a great achievement better than going 8-0, as to why specifically he lost 11 finals- his opponents were just better on the day. Had he won Wimbledon Lendl would have been put right up there with Borg I feel.

No he has not. Andy Murray has won 3, lost 8.
And like Murray, Lendl also he had strong competition in the finals. Except for Wimbledon 1989 against Pat Cash, he lost all the finals to other players who all won at least 6 GS titles: Becker, Wilander, McEnroe, Connors and Borg
