Default Local recipe thread.

MTF is a diverse place, and I thought it would be interesting to get some local recipes from you guys. What better way to experience another's culture than by their food?

Sinigang na Baboy (Tamarind Pork Stew). [Filipino]

500g Pork Belly cut into cubes (can be substituted with Fish / Shrimp / Beef)
15 Tamarind seeds / 1 pack Tamarind mix (can probably be found in Asian groceries).
2 cups Kangkong (water spinach) / spinach
1 eggplant
2 pieces taro
1 cup sliced radish / daikon
5 cloves minced Garlic
4 chopped tomatoes
1 chopped onion
2 cups string beans (cut into 2 inch strips)
1.5 liter of water.
Salt, pepper, and fish sauce (to taste)


Boil the tamarind in a saucepan and set aside. Remove the seeds and skin, and keep the juice. (Skip this if using tamarind mix)

Set a large pot on a medium flame.

Sautee garlic and onions using about 3 tbsp. of oil. Sautee for about 2 minutes, or until the onions are translucent.

Add the pork and sauté until brown.

Add the water and allow it to boil. Be sure to get the scum that floats after. Add the taro and the tomatoes, and set to a low heat. Cook it until the meat becomes tender. (30 mins or so)

Add the tamarind mix / tamarind juice

Add the eggplant / string beans / radish, and allow it to simmer (5 minutes)

Add the kangkong / spinach, and turn the fire off. Allow the spinach to cook in the remaining heat. (3 mins)

Season with salt, pepper, and fish sauce to taste.

Serve with white rice.

You forgot:

Sprinkle with 1 tbsp sugar (optional) just before serving.

I don't think there is a local recipe in Toronto, so I will repeat my simple recipe for gourmet rice and beans.

In a saucepan heat a can of black beans with one clove of minced garlic. Add what you think is the right amount of brown sugar and balsamic vinegar. THEN ADD THE SAME AMOUNT AGAIN. Simmer for 15 minutes. Forget the rice and just eat the jazzed up beans straight from the saucepan.
