SF are the best matches most of the time. Safin-Federer AO 2005, Djokovic-Federer USO 2010/2011, Safin-Agassi AO 2004, Agassi-Ginepri USO 2005, Djokovic-Federer RG 2011, Soderling-Gonzalez RG 2009, Roddick-Murray W 2009, Nadal-Verdasco AO 2009, etc.

I don't know, but the semi-finals have always been the most exciting moment of a Grand Slam, in my opinion. Maybe because there are still enough matches to appreciate, and not only one.

1st round, new faces and many upset or near-upset. (Nadal/Isner, Falla/Federer...)
(it's also the only time you see french players actually winning)

got to be the round of 16 (players) for me. usually have the most high quality matches in this round, plenty of stuff going on still, lots of faces to see. I enjoy most parts of Grand Slams but the earlier rounds have so many boring knock out match ups (although R1 can be fun for some surprises) and the latter stages, at least these past few seasons, have been so full of the same players

Definitely fourth round. It has a high number of players, but not too much so you can still be focused on one match and high quality players usually all in the 30s rankings.
