Well now that's the most ridiculous thing I've ever heard  Clearly you have never had our homemade smoked turkey b/c it's like the best thing ever (and this is from someone who doesn't really like turkey )

I've had smoked turkey legs before at the Fair. Everyone raves about them but to me they're gross, they taste like ham. How is smoked turkey made? We make our smoked salmon in a smoker.

ewwwwwwwwwww not turkey legs  My mom takes a whole breast and brines it in all kinds of good seasonings, then smoked for many hours. So it's sliced and carved like regular turkey, yet it has the smoky flavor and it's juicier and more tender than regular roasted turkey (though I did have the deep fried turkey this year for thanksgiving and that was pretty good )
There are two kinds of smoked salmon - cold and hot. hot would be made the same way.... cold wouldn't be |

With cold smoke.... like, the stuff you buy at the store at the deli or in those packages called "smoked salmon" would be cold smoked (jews would call this lox ). My mom has made salmon in their smoker at about 225 degrees with the water bath and the heating unit and all, and they love it... that'd be hot smoked
