Goat Cheese, Roasted Beet and Walnut Tart

2 small beets
1 tsp olive oil
salt and pepper
1 tbsp butter
2 shallots, thinly sliced
3 large eggs
3/4 cup heavy cream
1 tbsp fresh thyme
8 ounces goat cheese
1/2 cup toasted walnuts, chopped

1/2 recipe Flaky Pie Dough, in a 9-inch tart pan and blind baked (see recipe below)

To roast beets:
Preheat oven to 375F. Wash the beets and place on a large sheet of aluminum foil. Drizzle with 1 tsp olive oil and sprinkle with a little salt and pepper. Wrap beets in foil and place in baking dish. Bake until beets are tender, about 1 hour. Let beets cool then peel and slice. Set beets aside. (Beets can stain so be careful!)

To make tart:
Preheat oven to 375F. Melt butter in a fry pan and sauté shallots over medium heat until tender, about 5 minutes. Season with salt.

In a bowl, whisk together eggs, cream, and thyme. Season with salt and pepper.

Set prebaked tart shell (still in tart pan) on a rimmed baking sheet. Place the sliced beets and shallots in the tart shell. Pour custard carefully over the beets and shallots. Sprinkle with crumbled goat cheese and walnuts. Bake for 35-45 minutes until set. Let tart rest for 5 minutes before serving.

I'm dissapointed, FedHaters, you can do better than that. Every time Rafa loses RonE presents an exquisite meal along with a hilarious story, some photos as well, and here... I know Fed's not losing often, so you don't have experience, but it's training that makes better

Well, we don't bother because we are not as obsessed with Roger's losses as you people are with Rafa's losses. Besides there are far more Rafa-haters than Fed-haters in this forum and most posters in this thread are far from Fed-haters, myself included. You'll find that the tone of this thread is much less malicious and more fun-oriented than the piggy thread .

Well, OK. The phrase "you people" referred to the big number of Rafa-haters populating these parts of the internet . I'll take your word then that you are not a Rafa-hater and you just wanted more entertainment from this thread to assuage your grief for Roger's loss today . I'll try to indulge you and do my best to make you smile (we are not all as capable in this task as Ron is ). Here it goes:


After an early scare, Rogi-goat got back on track and managed to come out on top serving for the 1st set. At 40-0 he thought he was clear out of danger and actually started making plans in his mind for the party after the win:



However, crafty Nole had different plans and caught him by the hoof in the middle of his dancing reverie and dragged him back to reality by winning the 1st set playing an excellent tie break!





That certainly was a slap in the face for the Rogi-goat who managed to regroup and come back to win the 2nd set in an emphatic fashion therefore escaping again. Patient McNoleo though was not discouraged and in the end managed to grab the reins and gain full control of the situation:




What a victory that was! And how plentiful the milk flew! After expertly producing delicious cheese Farmer McNoleo was at a loss what to do with the rest of the milk. Then a great idea came to his mind: why not make his own soap?
