Well, if I could I don't have it all gone in one day, hence it will last days, once it's reheated.

 I have the same problem, Getta...
At start I used to work with a cookbook and instantly lost courage at the sight of all the preparations to do...
So I started to follow my intuition and it worked. I never use a book anymore, it's all improvising and mostly it works out pretty well (of course with the necessary tasting during the cooking proces!)
