Sauce is booze. :) In my parent's time, it was common to described someone who was drunk as being "sauced."

To answer the question, I would most likely tally it to Safin's mind going on a little walkabout for a while. It tends to get restless during matches and sometimes goes sightseeing into other parts of his brain that have nothing to do with the match at hand.
