Yes, a young cow used for corridas (I think they use cows instead of bulls in the South of France for this kind of stuff, that's why he says "vachette").
They use cows only in the Provence region, which is no real corrida, but removing a cordel from the horns of a cow, they call it "courses camarguaises". It is not bloody at all. In Languedoc-Roussillon where Richard comes from, the corridas are "real". E.g. Béziers has a classical arena. I am an expert on this, Richard obvioulsy not.
