The top one looks like salmon smoked in a smoke house at a really low temp, so it's more like drying the salmon out than cooking it. Is that right? I haven't had much of the cold.


This is how we make it.

See that's the thing, fresh Halibut doesn't really have much of a fish smell to it. But it has to be really fresh and I don't imagine that's too readily avalible to you.

Even when cooked? I mean, my parents only buy fresh fish and it always has no smell while raw, but as soon as it hits the saute pan BAM (emeril pun intended).

I imagine here in LA there is really fresh halibut and actually Boston is such a seafood region that fresh seafood, even of the kinds that aren't native to that area, are readily available. But no, I'm sure neither place has access to the same freshness of it as you have. Just like the strawberries are much much better here than the "fresh strawberries" on sale other places

Well if the smell bothers you I probably wouldn't saute it, baking it with a bit of butter would be a much better way to go. For halibut, you can really tell how old the fish is by it's smell when you cook it. The fresh stuff does have a smell but it's not what you'd call fishy. The older fillets smells like fish.

We might get fresh fish here, but no one even pretends with the strawberries.
