I wish I had time to answer better but in brief they are specific to what you are doing. So since we light candles it is the same prayer for lighting the candles on the Sabbath just with Hanukah substituted for Shabbat.

From my passing observation of Judaism as it currently stands, it appears to be quite a different religion from the Judaism I have come to know solely from reading the Old Testament. I was surprised to have conversations with Jewish people who told me that Talmudic Judaism does not believe in things like heaven, hell, angels, etc.

That's a tough question, as labels carry different meanings in different times. Well that's because the Torah and the Talmud are more important. BTW The Old Testament as you call it is my Hebrew Bible. The writings are the same although in a different order.

By Torah, you mean the Pentateuch - first five books of Moses?

I am surprised that the Talmud is seen as more important than the Prophets and the Writings.

Yes, I know OT = Tanakh, essentially identical except in how certain verses are translated. They mostly use the same Hebrew text - the Massoretic text (at least Protestant Bibles do).
