To each their own, I suppose. I much prefer Simon's economic movement to watching Ferrer run the marathon every time he steps on court.

Nadal, Djokovic and Murray are also guilty of this, their matches often become battles of endurance rather than tennis, but at least it's only when they face each other that this pattern emerges, Ferrer can turn almost every match he plays into a boring grindfest.

I don't have any bias against any playing styles, as variety is always great for the game. Sure, it can boring to watch a grinder vs a grinder at times, but so can a ballbasher vs ballbahser match. So really in this situation, it takes two to tangy, when it comes to classifying a match/player as unbearable to watch.

However, again, I personally have no issues even with seemingly "boring" matchups. They variety is always welcome as it would be much more boring to see this same "hypothetical" enjoyable play style day in and day out.

My only issue is time wasting between points.. Seriously when it gets up to 40+ second on a string of really unimportant points, it can be really rough to watch, especially when you try to watch big matches with friends who aren't as into tennis as you so those long time takers can make some moments really tough for them to watch. Obviously I understand if a player to takes extra time because the previous point was really physical and entertaining or whatever, or if it really is a big moment in the match and there appears to be reason for it, rather than stalling to throw your opponent like that, then such cases should be taken on a case by case decision by the chair and not automatically fault the player.

Simon isn't unwatchable to watch at all
He has economic strokes and movement indeed.
When he doesn't feel confident, he can play too defensively indeed and generally loses but he can be more aggressive in some occasions with his flat strokes when he wants to, he's capable to change the rhythm and the pace of the ball quickly while staying consistent from the baseline: it's when he plays his best tennis in this case.
Also, in his match against Monfils at AO, he was the more aggressive player in the first 2 sets especially on big points and then he got injured in the last 2 sets and fought well to win the match so he deserves respect for that, if Monfils couldn't take advantage of Simon's physical state, it's his fault...

To answer the question, i don't like watching players who hit 100 UES per match, it's disgusting to watch.

But it really depends who their playing also.
I turned off the final set at the AO final, first time I've ever done that for a slam.
